Salmon coated with ginger
What you need:
- 1/2 kg. salmon fillet
- 1 tablespoon Dijon mustard
- 1 spoon of honey
- 2 teaspoons of fresh grated ginger
- 2 teaspoons of olive oil
Combine the Dijon mustard, honey, ginger, and olive oil in a small bowl. Place the salmon fillets in a baking dish and coat evenly with the mixture. Bake in a preheated oven (350 degrees F) for 15-20 minutes.
Tropical Ginger Prawns
What you need:
- 1 1/4 jumbo shrimp, peeled and deveined
- 1 onion, chopped
- 2 garlic cloves, peeled
- 1/2 cup olive oil
- 1/4 cup lemon juice
- 2 tablespoons of grated fresh ginger root
- 2 tablespoons chopped cilantro leaves
- 2 teaspoons of sesame oil
- 1 teaspoon paprika
- 1/2 teaspoon of salt
- 1/2 teaspoon ground black pepper
- Skewers
Combine the onion, garlic, olive oil, lemon juice, ginger, cilantro, sesame oil, paprika, salt and pepper in a blender and puree until smooth. Save a small amount for washing.
Pour the mixture into a large bowl and add the shrimp. Coat the shrimp with the mixture, cover and refrigerate for at least 2 hours. When ready, discard the excess marinade and skewer the prawns.
Cook on a preheated grill over medium-high heat for 2 minutes on each side or until shrimp are cooked through. Brush with marinade while cooking.
