Restaurant Besting Method:
Pat steak dry. Do not add oil to the meat, but season generously. Heat 2 tablespoons of cooking oil in a large heavy skillet over medium-high heat. Add the steak and cook for 2-3 minutes. Flip and toss an additional 30 seconds before adding 4 tablespoons of butter and any aromatics you'd like to use, such as rosemary, thyme, or crushed garlic cloves. Tip the pan and use a spoon to begin basting the steak with the liquid as it cooks. When the second side has had a chance to cook for 3 minutes, flip again and continue flipping every 1 minute, basting continuously until desired internal temperature is reached.
