This delicious sourdough king cake is very easy to make, especially if you follow my recipe step by step! You'll need an active sourdough starter, for that totally unique yet incredibly addictive sourdough taste.
Table of Contents
- ¾ cup active sourdough starter
- 2 egg
- 5 ½ cups all purpose flour
- ½ cup sugar
- 1 ½ tsp ground cinnamon
- ⅓ cup melted butter
- 1 cup Sugar packer
- 2–4 tablespoon. milk
- 1 spoon lemon extract
- ¼ cup butter
- 16 oz sour cream
- ⅓ cup sugar
- 1 spoon salt
- 2 ice cube
- Place the butter, yogurt, sugar and salt in a pan over medium heat. Stir until the butter melts.
- Remove from heat and add two ice cubes, then stir and let cool to 100 degrees F. The ice cubes will help cool the mixture and add some moisture to the cake.
- Place the starter in a stand mixer fitted with a dough hook. Break the two eggs and start the mixer. Add two cups of flour and then the cooled butter mixture. Mix well, then add 3 cups of flour, one cup at a time. Knead the dough for 2 minutes.
- Transfer the dough to a lightly floured surface and use your hands to knead the dough for 10 minutes. Add more flour when necessary.
- Form the smooth dough into a ball and place in an oiled bowl. Cover the dough and let rise until doubled. This may take longer depending on the overall temperature of your kitchen.
- Meanwhile, combine ½ cup sugar and 1 ½ teaspoons ground cinnamon in a smaller bowl. Put this aside.
- Once the dough has doubled in size, punch down the dough and divide it in half. Place a portion of the dough on a lightly floured work surface, gently rolling it out until it is about 28 by 10 inches.
- Spread ½ of the butter over the pastry rectangle and dust this with the reserved cinnamon and sugar mixture.
- Place a plastic doll, a large dried bead, or even a plastic coin, into the rectangular dough. Roll the 28-inch side of the soft dough into a jelly roll. Form it into a ring, making sure the edges are down and around the center of the roll. The seam should not show. Wet and pinch the edges to seal. Repeat the process with the other dough.
- Cover the royal cakes and let rise until doubled in size. Bake for 15-20 minutes in a 375 degree F oven, until the cake is nice and golden,
- In a separate bowl, mix together the sugar, milk and confectioner's lemon extract. Pour this sweet mixture over the warm king cakes.
