These sourdough apple fritters are made with sourdough batter and fried to perfection. They are incredibly fresh and sweet, complete with a divine apple filling.
Ingredients
For sourdough dough
- 250 ml of milk
- 68 g of butter
- 480 g of all-purpose flour
- 1 package of instant sourdough
- ½ tsp. ground cinnamon
- ½ tsp. salt
- ¼ cup granulated sugar
- 2 large eggs
- Vegetable oil
For the cinnamon apples
- 42 g of butter
- 4 medium apples
- ¼ granulated sugar
- ½ tsp. ground cinnamon
Maple glaze
- 640 g of powdered sugar
- 1 tablespoon. pure maple syrup
- ½ tsp vanilla extract
- ¼ teaspoon salt
- ½ cup of boiling water
GUIDELINES
- Heat the milk and butter in a small saucepan over medium-low heat until the butter melts. Let the butter mixture cool for 5 minutes.
- In a stand mixer fitted with a dough hook, combine 2 cups flour, instant sourdough, salt and sugar.
- Add the warmed butter and milk mixture, then the eggs and mix until you have a wet dough.
- Add the rest of the flour, ¼ cup at a time, while cooking the dough on medium-low speed. You may not need 4 full cups of flour.
- Continue to knead the dough until the dough is smooth and elastic.
- Cover the bowl with plastic wrap and place the dough in a warm place to rise and double in size for 1 hour.
- Meanwhile, melt the butter in a medium skillet over medium heat. Add the apples, sugar and cinnamon until the sugar has dissolved.
- Cook the apples for 7 minutes until the apples are soft and the juices have thickened. Set this aside to cool.
- On a lightly floured surface, roll the dough into a large rectangle.
- Spread cinnamon apples over half of the dough lengthwise.
- Fold the other half of the dough over the apple. Use a pastry cutter to cut the dough and apples into strips. Cut the dough and apples at an angle until you see uneven pieces of dough. Gather the pieces of dough and the apples back into a row.
- Divide the line into 15 equal pieces and use your hands to break up the dough and apples of each piece so that they stick together and stay. Flatten and shape each piece into a disc. Place the apple dough discs on the parchment paper.
- Cover with plastic wrap and let rise for another half hour.
- Meanwhile, add vegetable oil to a pot set over medium-high heat and heat the oil to 375 degrees F. Once the oil is nice and hot, it's time to fry your battered noodles.
- Remove the fritters from the oil and transfer to a paper towel-lined plate.
- You can prepare the glaze while heating the oil. Simply combine the powdered sugar, maple syrup, salt, vanilla, and reserved water in a medium bowl and mix until smooth.
- Dip the warm fritters in the glaze, turning them so they are well coated.
- Transfer these sweet sticky apple fritters to a wire rack. Enjoy it for breakfast or as a quick snack!
