- strawberry – They must be fresh strawberries. Frozen ones are very soft when thawed.
- garlic – Fresh garlic is best.
- fresh mint – Feel free to use dried basil if you have it on hand. If you are using fresh parsley, reduce the amount by half.
- olive oil – I love extra virgin olive oil. Avocado oil can be used instead.
- salt – Kosher or Himalayan salt works great.
For the bread:
- french bread – I love baguettes for this.
- butter- Olive oil is a good substitute.
To combine them:
- Goat Cheese – Creamy, spreadable goat cheese is best. It is ok if it is herbed.
- Balsamic reduction – Try my recipe or use your favorite.
How to Make Strawberry Bruschetta
It doesn't get much easier than tossing, toasting and serving appetizers. Scroll to the bottom of the post for the full recipe card.
- Make the fruity topping. In a bowl, mix the strawberries, garlic, basil, olive oil and salt until well combined. Set it aside.
- Toast the bread. Preheat oven to 400F. Arrange sliced bread on a baking sheet. Brush each slice with melted butter or olive oil. Bake it for 5-7 minutes or until toasted and golden. Remove them from the oven and let them cool completely.
- Collect it. Spread goat cheese on each slice of bread. Top them with the fruit mixture, drizzle with the balsamic reduction, serve and enjoy!
