- 160 g active sourdough starter
- 230 g warm water
- 330 g bread flour
- 30 g cocoa powder
- 20 g powdered sugar
- 6 g coarse kosher salt
- Combine the initial 60 g of sourdough with 60 g of water and 60 g of bread flour. Mix until fully combined, then set aside. Once the engine has doubled in size, it is ready to use.
- Mix 160g active starter with 230g warm water in a large bowl, stirring until combined.
- In a medium bowl, whisk the bread flour, cocoa powdergranulated sugar and kosher salt.
- Add the dry ingredients to the wet ingredients and mix until you have a stiff dough. Continue mixing using your hands or a spatula.
- Cover the dough with plastic wrap and let it rest for 30 minutes.
- After 30 minutes, perform a series of stretches and folds, then with wet hands, gently pull the dough until it's long enough to fold over itself. Rotate the container and repeat 4 times.
- Set the bowl aside for 30 minutes. Then repeat the stretching and folding process again, followed by a 30-minute break.
- After the final set of stretches and folds, let the dough rest for 1 hour.
- Transfer the dough to a lightly floured work surface and shape the dough into a ball. Simply fold the edges of the dough into the center until it forms a nice ball.
- Place the dough layer side down on a piece of parchment paper, then frost the parchment paper with the chocolate molded dough and place it in a bowl that is similar to the shape of your dutch oven.
- Cover the bowl with plastic wrap and place it in the refrigerator to ferment overnight, or on the kitchen counter until doubled in size before baking.
- If you chill your chocolate batter in the fridge overnight, then remove the bowl from the fridge and let it come to room temperature 4 hours before baking.
- Once you're ready to bake, place yours Dutch oven in the oven and heat to 475 degrees.
- Use a sharp knife to score the top of the loaf. Then carefully remove the dutch oven from the oven and use a piece of parchment paper to raise and lower your bread in the dutch oven.
- Cook the chocolate sourdough bread in a covered Dutch oven at 475 degrees F for 30 minutes, then cook uncovered for another 10 minutes.
- Remove the chocolate loaf from the Dutch oven once it's done cooking and place on a wire rack to cool.

- 4 in the afternoon: Combine the ingredients to make the dough for the chocolate sourdough bread

- 12 PM: Place Dutch oven in a cold oven and preheat to 450F.
- 12:30 p.m: Uncover the loaf and carefully grate the surface of your loaf with chocolate. Carefully remove the Dutch oven from the oven and use parchment paper to lower the bread into the Dutch oven.
