Material notes
- corn: White corn is the traditional choice for puree choices, but yellow corn and sweet corn will also work. Look for ears with bright green husks and plump kernels to ensure optimal flavor and juiciness.
- Mayonnaise: Use a good quality mayonnaise for a creamy base that helps the other ingredients stick to the corn.
- Mexican crema: If you can't find Mexican cream, sour cream makes a perfect substitute.
- Kotija cheese: An important step is to grate your cotija cheese rather than shred it. This will give you the right texture and work better with our mix, ensuring even coverage and enhancing the overall flavor.
- Ancho chili powder: Adds a light smokiness without being overly spicy. Regular chili powder can work, but ancho gives you the most authentic flavor.
- Jhal Sauce: For hot sauce, use Mexican-style hot sauces such as Cholula, Tapatio or Valentina. I personally like to add hot sauce as it adds both heat and flavor but it is optional.
- cilantro: Add coriander leaves for both color and flavor if desired. If you've got a genetic aversion, feel free to replace it with parsley or leave it out altogether.

Cooking: Corn is easy to make in large batches in the oven or on the grill without increasing the cooking time. Your only limit is the amount of space you have. The corn will keep warm in the foil for at least 1 hour.
