Each truffle is decorated to look like a spooky eyeball making them the perfect addition to any Halloween party spread. Making these truffles is as easy as it is fun.

These pumpkin truffle eyeballs don't quite make it into the haunted house, so the spooky ghostly eyeballs are on the spooky side. With just 15 minutes of prep, you can pop them in the fridge and enjoy some downtime (or a Halloween movie) while they're chilling. After that, it's just a quick dip in melted white chocolate and garnished with M&M's and red icing to create the perfect “eyeball” effect.
Material notes
- Graham Crackers: 10 whole graham crackers, just toss them whole in a food processor. This is about 1 sleeve of graham crackers.
- Pumpkin Puree: Not the same as pumpkin pie filling – it's canned pumpkin with no other ingredients added.
- Cream Cheese: 1 block, soft. You can also use low-fat cream cheese.
- Spices: A base of cinnamon, ginger, nutmeg, and cloves Pumpkin Pie Spice mixed up
- White Chocolate Chips: Melt the chocolate chips just before you start dipping your truffles. You can also use white chocolate melting wafers, which melt more smoothly.
- M&M's: Use different colors for “eyeballs” or stick to classic brown for a more realistic look. Candy eyeballs are also a fun substitution if you want to mix it up.
- decorating gel/jail writing: These are small tubes of icing dressing with a gel consistency. This is not food coloring so be careful not to confuse the two. These are easy to find in the baking section of most craft or grocery stores.
Drawing on the pupil

Melt the chocolate chips
Melting chocolate is actually pretty simple, but can go from silky smooth to clumpy in literally seconds. When melting chocolate in a microwave you should microwave for 10 to 15 seconds at a time. Stir in the chocolate chips with a rubber spatula, scraping down the sides of the bowl, and then reheat and stir until the chocolate is mostly melted. When only a few lumps remain, continue stirring until the chocolate is smooth (the heat from the already melted chocolate should be enough to completely melt those little lumps).
If your chocolate starts to harden as you dip your truffles, pop the bowl of chocolate back in the microwave for 10 seconds, then stir and continue dipping.
