Material notes
- Chicken breast: You want even-sized chicken breasts for cooking. Try to buy chicken that has not been injected with saline for best results.
- Broccoli Florets: Cut into medium-sized (bite-sized) florets. Frozen broccoli can be used, but it will be much softer.
- Garlic: Fresh minced garlic packs the most flavor. The Georged type works too, but the flavor always has a bit more bitterness.
- Lemons (Jested and Juiced): You are using both zest and juice in this one so be sure to zest it first!
- Lemon Chilli: This spice adds a big punch of lemon zing to the mix. We love it!
- Parmesan Cheese: Best fresh grated or sliced. Avoid the powdered kind as it may not dissolve.
Saline-injected chicken vs. natural
When shopping for chicken, you may notice words like “saline-injected” or “raised” on the packaging. This means the chicken has been mixed with a salt water solution, often to increase its moisture content and make it appear fresher on store shelves. While this added solution can help the chicken stay juicy, it can also affect how your vegetables cook.
Saline-injected chicken usually releases more liquid during baking, which can make your broccoli a bit mushy as the excess moisture turns brown. To keep your veggies crispier, consider roasting them on a sheet pan if using saline-injected chicken.
Natural or unprocessed chicken does not release as much liquid, which allows the vegetables to cook evenly for that ideal texture. For best results — and to avoid paying extra for extra water — look for “natural” chicken on the label.
