I have this thing where it is difficult to eat more than 1-2 eggs, which does not make it easy to achieve my egg protein goals just for breakfast. But these marinated eggs are an exception. While I could probably eat 4-6 of them as a meal, I like to add them to bowls, salads, or Topped with raw salmon And a little red chili oil.
Recently I had a delicious poke bowl of Jammy eggs on a local noodle strip and decided to figure out how to make them myself. They allow you to add extra Miso Jammy Eggs but load $ 1 for half an egg, which seemed crazy to me. 24 dollars for a dozen egg ?? I can surely do these at home.
After some rehearsals, it was finally called to this recipe. Now these are one of my three main ways to make eggs.

Recipe
These marinated soybean eggs have a soft center making them soft and pleasant. Excellent as a snack on its own, or cut and served in salads or soups.
- 3 Tbsp Miso paste (white or yellow works better)
- ½ CUP I'm the sauce (or Tamari if without gluten)
- 2 Tbsp maple syrup
- ½ CUP hot water
- 1 Tbsp sesame seeds
- 3 clove garlic (finely chopped)
- 4 green onions (finely chopped)
- 1 brush off sriraca (Optional, for a little blow!)
- 12 large eggs

In a large bowl mix together all the ingredients (except the eggs) and set aside.

Fill a pot with a few glasses of water over high heat and bring to a soft boil. Lower heat if necessary, so that boiling water does not boil too tightly.

Carefully add the eggs to the boiling water and cook for 6 minutes for a jammy yellow (a little run in the center). If you prefer a stronger yellow, then cook for 9 minutes. These cooking times will give you a beautiful balance of soft yellow, rich in slightly strong egg white.

Gently remove the boiled eggs from the water pot and place in a bowl of ice cold water to stop the cooking process. After a few minutes in the ice water, I peel the cooked eggs. Don't worry if the egg shells come out a little rough – the marinade will hide any imperfections!

Take the eggs peeled from the ice bath and place them in the Miso marinade container. Make sure the eggs are completely dipped in the liquid. If necessary, press gently down with a spoon. Place the lid and raise the hermetic container for at least 6 hours, but at night it is best for a deep, spicy infusion.
