Material notes
- Away from the pork: Your roast can be tied or untied. Be sure to use a loin, not a tenderloin.
- Dijon Mustard: Yellow has a more intense and complex flavor than mustard. You can use a smooth or seeded Dijon mustard for this recipe.
- Apple Cider Vinegar: Adds acidity. A pinch of red or white wine vinegar can be substituted.
- Apple Juice: The sauce is the star. Use 100% apple juice for best results.

Reheat in oven Preferred method for leftover pork loin. Lightly brush pork with water, remaining glaze, or olive oil to add extra moisture, about 1 teaspoon per slice. Wrap pork tightly in aluminum foil. Bake in a 250 degree oven until the pork reaches an internal temperature of 145 degrees F. Start checking the temperature after 15 minutes as the reheating time may vary.
