Meet your new obsession! I don't want to toot my own horn (or maybe I do, ha!), but this bacon-wrapped pickle dip is so good you'll be dipping your potato chips in again and again. It's hard to say no to a second, third or even fourth because its creamy texture has all the flavors of pickles. Let's be honest – when bacon and pickles come together, it's a beautiful (and seriously delicious) thing!
Serve it with our favorites Homemade French Bread or beside us Smoked Chicken Wings For game day!
Why our recipe?
- Tastes like bacon-wrapped pickles, but all in the form of a creamy, cheesy, bacon-y dip.
- Tangy dill pickles, smoky bacon, and a creamy base combine for an irresistible combination of flavors.
- Serve with chips, crackers, bread or vegetables.
This dip is perfect for an appetizer or special occasion, but since it's on the heavy side, you can enjoy it as a meal—we certainly did! It's comparable to classics like spinach dip or spinach artichoke dip. Pair it with your favorite chips, crackers, crusty bread or crunchy veggies for the ultimate snack spread, or as we like to call it: a snack-e-tizer. This is one of those quick and easy dips that will have everyone asking for the recipe!
Material notes
- Sour Cream and Mayo: This combination makes the dip smooth and creamy. If you prefer to use only sour cream, you certainly can, but the mayo balances out the sour cream and is one of the benefits of this dip. You can use plain Greek yogurt.
- Pickle Juice: Use some from your used pickle jar.
- Bacon: We cook ourselves Bacon in the oven or In the air fryer For convenience you can also buy pre-cooked. You can use thick cut, classic cut or even a low sodium bacon.
- Ritual: You'll want to use dill pickles for this recipe.
- Cheese: We love sharp cheddar for its bold flavor and prefer to grate it ourselves. However, you can use pre-shredded sharp cheddar cheese.
- Herbs: You can substitute fresh herbs for dried herbs (parsley, chives and dill). Use double the amount.
Cheese substitute
While we love sharp cheddar for its bold flavor, feel free to use your favorite variety. Some great options include mild cheddar, Monterey Jack, or Colby Jack.
Deeper Ideas
While you can certainly enjoy this dip with a spoon, it's even better when paired with a savory dipper. Our favorite way to enjoy it, though, is on crusty bread—it really lets all the flavors of the dip shine.
Crackers: A sturdy cracker like pita chips or wheat crackers is a great option to scoop up all that cheesy goodness.
Potato Chips: The perfect classic pairing.
Pretzels or Pretzel Rolls: The slightly salty, chewy texture works perfectly for the pickled flavor. You can even create your own Pretzel rolls or Soft pretzels For an extra special touch.
Crusty Bread: A thick slice of baguette or sourdough really lets the creamy dip shine. Consider toasting the bread for added texture.
Vegetables: Keep it light and fresh with crispy celery sticks, carrot sticks or cucumber slices.
Make-Ahead Tips
This dip is super easy to whip up, especially if you have pre-cooked bacon ready. The hardest part? Wait for it to chill in the fridge, as you'll want to dig into it as soon as you make it. But trust the process – allowing the dried herbs and spices to fully develop when allowed to steep for an hour. Of course, you can use fresh today!
You can dip up to 2 days in advance. Stir the dip thoroughly before serving to redistribute the ingredients and ensure a creamy texture. If it seems a bit thick, mix 1-2 tablespoons of milk or pickle juice.
