As you may already know, we have been busy for the past two years creating one food forest on our property, complete with fruit trees, berry bushes, herbs and perennial vegetables. An exciting addition this year is our strawberry/asparagus planting patch. For the first time, we have our own home grown strawberries!
I'm so excited to share this old-fashioned strawberry shortcake recipe that holds a special place in my heart. I grew up on it, and the low-sugar dessert really lets the strawberries shine. These cookie-style desserts are deliciously rustic, and their low sugar content brings out the natural sweetness of the berries.
Preparation is similar to preparation handkerchief, but the addition of a beaten egg gives these cakes a more cake-like texture. While cake flour is recommended for extra convenience, all-purpose flour can be used if that's what you have on hand.
