For the dough

- 1 cup grated cheese
- 1 package of mozzarella pieces

- 1/4 cup spicy pepperoni
- Combine the milk with the water, then stir the sourdough starter and sugar into it until dissolved.
- Place the bread flour and salt in the bowl of a stand mixer. Add the egg and then start mixing on low speed using the dough hook. Alternatively, you can choose to mix the ingredients with your hands.
- Add the milk and water mixture until everything is well incorporated. If the mixture is too dry, just add a little more water.
- Knead the dough until you are left with a well-hydrated dough.
- Add some melted butter and mix on low speed.
- Boil for another 2-3 minutes, scraping up any scraps that stick to the bowl.
- Once the dough is elastic, firm and starts to come away from the sides, then transfer it to a floured surface.
- Continue kneading the dough by hand until it's nice and smooth.
- Place the dough in a lightly greased bowl. Then cover and place in a warm place for 3-4 hours to ferment in mass.
- Once the dough has risen enough, press the dough and shape it into a ball. Then put the dough in an airtight container and refrigerate overnight, if you want to bake it in the morning.
- If you want to bake on the same day, then continue with the next step.
- Remove the dough from the refrigerator and let it come to room temperature, or until it is soft enough to handle.
- Roll out the dough to a 12-inch by 20-inch rectangle.
- Spread a thin layer of pizza sauce or tomato sauce on top of the rectangular dough.
- Add some cheese and pepperoni, then roll the dough starting from the long side.
- Grab the seam and use a sharp knife to cut the pizza roll into 10 equal pieces.
- Place the rolls in a well-oiled baking dish, leaving enough space for the rolls to expand.
- Cover the container loosely and place in a warm area to test. The rolls should double in size after 3-4 hours.
- Preheat the oven to 425F and place an oven rack in the center of the oven.
- Once the rolls are insulated, spray them with a little water and place them in the preheated oven. Bake them for 15 minutes, then lower the temperature to 400 degrees F and continue baking for another 15 minutes, until golden brown and oozing with gooey cheese.
- Brush them lightly with melted butter and enjoy.
