This recipe is all about the sauce. This flavorful ranch sauce tenderizes the meat and brings out plenty of flavor in both the chicken and vegetables. And who doesn't like farms? This is a classic flavor combination for a reason.
Material notes
- Chicken breast meat: This is a very simple option that requires no trimming. You can use chicken thighs if you prefer, but thighs take longer to cook.
- Red Potatoes: Be sure to slice them thinly so they cook at the same rate as the chicken. Too big and you're going to be left with a portion of crunchy and raw potatoes.
- Other Vegetables: You can mix vegetables as you like. Zucchini, carrots, even whole cloves of garlic will work well in tin foil packets.
- Sauce: All these ingredients play an important role in making the perfect sauce.
- Cheese made in Parma: Adds a nice saltiness, but you can substitute with cheddar or mozzarella.
Types of potatoes
Red and golden potatoes with thin, edible skins are best for foil packets. When using potatoes, be sure to cut your potatoes thinly so they cook at the same rate as the chicken. Alternatively, you can also cut them into 1/2-inch cubes. If you leave the potato chunks too big, you'll end up with a shriveled and raw potato, and no one will like it.
Campfire Cooking Instructions
Place over hot coals and cook for 20-30 minutes, turning once halfway through, until meat is cooked through and vegetables are tender.
Storage and reheating instructions
Keep in fridge Up to three days in an airtight container.
Reheat Place it in a foil packet in a 300-degree oven until thoroughly heated, about 10 to 15 minutes.
