Material notes
- Sweet Potatoes: Choose 4 medium-sized fresh sweet potatoes that are about the same size.
- Lime: Freshly squeezed lime juice tastes best, but bottled lime juice also works.
- garlic: Fresh garlic is recommended for best flavor, but pickled or frozen minced garlic also works.
- Chipotle Chili Powder: Can find these down the spice aisle. New Mexico chili peppers can be used as a substitute or if you want a little less spice, regular chili powder works too.
- Chipotle in Adobo: It is usually found canned in the Hispanic food aisle of the store.
- Spinach: Fresh spinach is recommended for this recipe although frozen can be used in a pinch. Just make sure it is thawed, rinsed and excess water removed.
- Coriander: Fresh cilantro can be found in the produce section of your grocery store.
- Shredded Mozzarella Cheese: You can slice your own or use pre-cut. You can also use low moisture mozzarella cheese if you prefer.

Frozen leftover chipotle in adobo
We don't like to waste any of our ingredients and since we're only using one chipotle from a whole can, we're going to freeze the leftovers for future recipes. Divide the remaining chipotles evenly into small freezer bags (mark the date) and refrigerate. Thaw in the fridge or on the counter if needed in the future.
Potato substitute
While we love the taste, and added health benefits of sweet potatoes, you can substitute absolutely any large baking potato, such as russet potatoes, or other types of sweet potatoes, such as the yellow-fleshed variety. The taste will be different, but they will still be delicious.

And that other potato-like item labeled as a sweet potato? Yes, it's also a sweet potato—just a different variety, just as russet and red potatoes are both types of potato. This recipe works with any type of sweet potato, but we prefer orange-fleshed ones for their flavor and texture.
