- Prepare the oven. Preheat it to 375F. Line a baking sheet with parchment paper and set it aside.
- Season them. Spread the onion rings on the prepared baking sheet without breaking the layers. Drizzle with olive oil. Season with salt and pepper.
- Bake them. Bake for 15 minutes and then remove from the oven. Turn oven to 450F.

- Preheat oven to 375°F.
- Line a large baking sheet with parchment paper.
- Keep the onion whole, but remove the ends and peel. Slice into 1/4″ thick rings. Place the rings on the prepared baking sheet, being sure to keep them intact. Drizzle with olive oil and season with salt and pepper.
- Bake for 15 minutes.
- Meanwhile, add heavy cream, cooking wine, mustard, thyme and salt to a small saucepan. Bring to a slow simmer for 5 minutes. Remove from heat.
- When the onion is done. Remove from the oven and turn the heat up to 450°F.
- Gently transfer the cooked onion rings to a baking dish (if you want to stack them on top of each other), making sure to leave them intact.
- Pour the cream mixture over the onions and sprinkle with Parmesan cheese.
