Tips and variations
From adding Greek flair to using spreadable cheese, these easy cucumber sandwiches will be a hit with everyone.
- Make it toasty. Toast the baguette slices over medium-low heat until toasted on both sides. It will add a nice crunch to your sandwiches.
- Add salt to them. In a bowl, mix the chopped cucumber with 2 teaspoons of salt. Let them sit for 30 minutes or until they release excess moisture. Drain them under running water and swirl them gently until all the salt is removed By doing this, the sandwiches stay crispier for longer.
- Add protein. Mix 2 cups of shredded rotisserie chicken into the cream cheese mixture or add sliced smoked salmon to the sandwich for a hearty bite or hard-boiled eggs.
- Make them Greek-style. Assemble the sandwiches as usual but top with feta cheese and black olives. Don't forget a drizzle of olive oil!
- Choose spreadable cheese. If you don't want to beat the cream cheese, there are store-bought versions that are pre-whipped so all you have to do is mix everything with a spoon.
- Add more spices. Add 1 teaspoon ground paprika, 1/2 teaspoon Greek seasoning, or 1/2 teaspoon onion powder to the cream cheese mixture for added depth.

Absolutely! They are best fresh but you can prepare them 1-2 days ahead. Do not make them earlier as the bread will absorb excess moisture and become soft. Refrigerate them in an airtight container until ready to serve. If you want to make the cream cheese mixture ahead of time, you can do it up to 5 days in advance.
