Material notes
- Ground Chicken: Or use ground turkey.
- Ground chicken: Use lean or regular ground chicken depending on your preference. Lean ground chicken will be lighter, but can be a bit juicier on a regular basis.
- Plain bread crumbs: Regular or panko breadcrumbs both work. If you only have Italian-seasoned breadcrumbs, you can use them but reduce or eliminate the added salt and basil.
- Parmesan: Freshly grated is ideal for best flavor, but pre-grated can be used if you have it on hand. Avoid putting the powder in a canister, as it will not dissolve evenly.
- garlic: Fresh garlic is recommended for best flavor, but 1/2 tsp garlic powder can be substituted if needed.
- Worcestershire sauce: Don't worry, we can't pronounce it either. If you're out, you can substitute equal amounts of soy sauce or coconut aminos.
- the milk: Any type of milk will work, including dairy-free options like almond or oat milk.
- Extra virgin olive oil: It helps bind the meatballs and adds moisture. Avocado oil is a good alternative.
- egg: essential for binding the meatballs together. If you're looking for an egg-free alternative, try substituting 1 tablespoon of flaxseed mixed with 3 tablespoons of water.
What about ground turkey?
Substitute ground turkey for the ground chicken in this recipe. Ground turkey comes in a variety of fat options, so we recommend using a lean ground turkey. Cooking times and measurements all remain the same!
Chef's tip
Olive oil is a great addition to ground chicken because it adds a lot of moisture and flavor without making the meat greasy. And since olive oil is a healthy fat, it makes ground chicken a healthier alternative to ground beef without sacrificing the perfectly juicy meatballs.
Spaghetti topped with cheese all over…
You can serve the meatballs plain or with gravy as a main dish alongside mashed potatoes or as a side dish. Spaghetti sauce For spaghetti and meatballs. Another fun way we like to mix it up is to serve them Meatball subs.
Does size matter?
In the case of meatballs, yes. If you make them too large, they may take longer to cook and end up undercooked – not something you want with chicken. And too small in size they will cook too quickly and may dry out. A good way to make sure they are the same size is to use a cookie scoop and then use your hands to shape the amount.
