“Most trend recipes we've ever published.” This is how my colleague described Rod fresh cottage cheese. He was not talking about Chili Crisp; He was talking about the protein.
After arriving in the early 2000s thanks to the Atkins diet, Protein is back – everyone, seems to be talking about it, diversifying the ways they get it, and usually try to discover ways to eat MORE its. You probably have someone in your life that is thinking about protein This minute. (For me, is my husband.)
And the queen of high protein ingredients? Cheesen cheese cottage cheese. So I agree with my colleague; When King Arthur's test kitchen published this recipe a few weeks ago, it felt like the perfect time.
And yet protein was not necessarily in mind when Sarah Jampel, the development of King Arthur's recipes and the test kitchen manager, began working on these. Instead, she arrived for cottage cheese because of the structure. “Like other acidic ingredients like yogurt or honey, cheese curd tends the dough and makes it easier to roll,” she told me. Of course, Cheese Cheese brings other things to the table, namely all that protein. There are 14 grams of protein in each of these flat circles, which is two more than my favorite protein bar.
But that's not all. Cheese Cheese also adds fat, moisture and its signature tang. (And salt. ”Cheese cheese is so salty, “Sarah says.) To fill the aroma of cheese, Sarah promotes a tablespoon of fresh chili in the dough, along with a generous handful of fresh plants. These two additions create a yin and yang – one is spicy, the other is cooling.
To oppose heat further, Sara recommends pairing these with a diving such as tzatziki. You can also go to the other side and make them with some Calabrian chili paste. But let's be true, you know what we and everyone else will do with these circles. We will double in the protein and eat them with eggs.
