- Red Chilli – Don't worry if it's not super crunchy anymore.
- Yellow Chilli – Use your favorite color of bell pepper. Avoid baby bell peppers as they are too small for eggs.

How to Make Eggs in a Hole with Pesto

- Fry the chillies. Place a large skillet over medium heat. Add oil and pepper rings. Let them cook for 1 minute.
- Add eggs. Crack an egg into each ring, then cover the pan. Cook for 2-3 minutes for over-easy eggs. If you like the yolks set, let them cook for another 1-2 minutes.

Tips and variations
Once your egg is fully cooked in a hole, slide it onto a piece of toast and top with feta cheese and chili oil.
- Make it spicy. Add red chili flakes or a drizzle of chili oil for some heat.
- Add cheese. Top the eggs with feta cheese, goat cheese, or shredded parmesan for extra flavor.
- Slide the spatula. Do not move or attempt to lift the eggs before cooking as the yolk may break. You'll know the eggs are ready when you can easily slide a spatula under them.
