- 1 large head of fresh garlic
- 1 tablespoon of olive oil
- 1/4 cup of the bubbly or active start of the sourdough
- 1 1/2 cups of warm water
- 4 cups of bread flour
- 1/4 cup of whole wheat flour
- 1 1/2 tsp fine sea salt
- 2 spoons chopped rosemary
- Before baking, feed your starter so that it is active and bubbly. Store the sourdough starter at room temperature until you are ready to use it.
- Preheat your oven to 400 degrees Fahrenheit. Lay the garlic flat on a work surface and cut off the top of the garlic bulb to reveal the cloves inside. Brush the garlic bulb with olive oil, then wrap in foil. Roast the garlic in a pan for 45 minutes to an hour. The garlic bulb should be soft and have a caramelized glaze when done. Allow to cool before adding your batter.
- In a large mixing bowl, whisk together the starter and water with a fork. Combine these ingredients until you have formed a rough dough, then mix by hand, making sure to incorporate any dry flour bits. Cover it with a wet towel and let it rest for half an hour.

Meanwhile, line a proofing basket or bowl with a towel and add a dusting of flour. With lightly floured hands, gently grasp the dough and pull it towards you in a circular motion to tighten the shape. Place the dough on the lining of its insulating basket, side up. - Cover the dough and let it rest until puffed but not completely risen. This should take about 30 minutes to 1 hour.
- Preheat your oven to 450 degrees Fahrenheit. Cut a sheet of parchment paper to place in your baking dish.
- Place the parchment paper over your dough and turn the bowl to release the dough. Dust the dough with a little flour and knead gently with your hands. Use a sharp knife or razor to make a cut along the front of the dough. Use the parchment paper to lift the dough and place it in its baking pan.
- Bake the dough on the central rack for 2 minutes, covered. Then remove the lid and continue baking for 30 minutes. Remove the rosemary garlic bread from the pot and finish baking directly on the oven rack for the last 10 minutes. Transfer the rosemary bread to a cooling rack to cool for an hour before slicing.
