We love a good kabob! Eating food off a stick heated by an open flame makes things even better. The recipe is designed to pair vegetables with similar cooking times so you can create perfectly cooked skewers.

There are many ways to personalize these kebabs with your favorite vegetables.
Material notes
- Zucchini: You can also use yellow squash or a mixture of both.
- Bell Pepper: Choose any color. Red, orange and yellow are sweeter, while green is often cheaper.
- Mushrooms: Button or cremini mushrooms (brown mushrooms) work great.
- Cherry Tomatoes: or grape tomatoes. They add a burst of juiciness.
- Red Onion: Ideal for grilling because of its strong flavor, even when tender.
- Olive oil: Spices help vegetables adhere. Any cooking oil will work.
- Spices: Essential for adding flavor.
Skewers
If you are using bamboo sticks, soak them in water for 30 minutes to prevent them from burning. If you use metal, be careful and always use tweezers or heat protection.
When adding vegetables to the skewers, be sure to leave a small gap between each vegetable so that the heat circulates around to cook each piece completely.
Go ahead and do the storage instructions
You can chop the vegetables up to the day before. If they leave any liquid, be sure to drain the liquid before adding the oil and spices just before grilling.
Keep in fridge Vegetables up to three days after removing them from the skewer in an airtight container.
Reheat Heat a skillet over medium heat with a little butter or olive oil.
