I love peach season! Fresh peaches are one of those fruits that aren't so good when they're not in season. We usually eat them (lots of them!) when they are. Delicious peach cobbler is another great way to use up this summer produce.
Easy Peach Cobbler Recipe
Peach season inspires new recipes in our house, including this Ten Minute Peach Cobbler! It works with fresh (but not canned) peaches and is delicious. It's also quick and easy to make a single serving. It's healthier, grain-free and naturally sweetened.
I love how this fresh peach cobbler is so smooth and not overly sweet like some recipes. We serve it with homemade whipped cream, but you can also add a spoon vanilla ice cream. Try topping it with some walnuts or pecans for an added crunch. It might just be the best peach cobbler I've had!
Word of warning: this is different from the southern or old-fashioned peach cobbler recipes you'll find in most places. These use ingredients like brown sugar and all-purpose flour to make a golden brown cobbler. In my version, you don't even have to get your baking dish out! It has all the flavors in a simplified version.
Other filling options
This recipe only works with fresh peaches (not canned peaches). You may be able to thaw and strain the peach juice from frozen peaches, but I haven't tried it.
If peaches are not in season, you can make this recipe with other fruits. Raspberries, blackberries and blueberries also work well. Or just do this fresh recipe with red berries. You can also use soft fruits like pears. The apples are a bit too strong, but if you're craving apple cobbler try this recipe.
A random note about the cream: I made homemade whipped cream with heavy whipping cream and a little stevia. I used a chopper blade in my immersion blender – the same one for grinding coffee. I didn't wash the coffee beforehand (because I'm lazy) and it was AH-MAZING! I highly recommend adding a tiny pinch of ground coffee to homemade whipped cream, though maybe not the peach…
