Introduction to Fermented Shrubs
A shrub is a pleasant drinking vinegar that includes vinegar, fruit and sugar. It's a versatile mix that can be flavored with sparkling water, alcohol, bitters and other additives after it's made.
There are different ways to prepare a bush. Some fermented shrub recipes instruct you to heat all the ingredients before straining and using, while others recommend a no-cook method.
Personally, I prefer the no-cook method, known as the cold method. This method preserves more of the beneficial nutrients and enzymes, especially when you use apple cider vinegar, which is raw and unfiltered.
