- 20 g starter
- 30 g bread flour

Make a yeast
- Prepare your dough by combining 2 tablespoons of raw sourdough starter with 50 g of water, 30 g of bread flour and 20 g of whole wheat flour. Mix these ingredients until there are no lumps left in the flour. Cover with plastic wrap and let rise for 4 hours, or until doubled in size.
Knead the dough
- After 4 hours have passed, mix the three flours in 300g of water in a large bowl. Mix this by hand until no dry lumps remain. Simmer for 1 to 2 minutes, then cover and rest for an hour.

- Then stretch and fold the dough for 2 hours after every hour. Grab the bottom of the dough, pulling it up and over you.
