- 2 ingredients. With just 2 simple pantry ingredients, you can save an emergency dash to the grocery store the next time you run out of brown sugar.

What is brown sugar?

How to Make Brown Sugar
To make your own light brown sugar, all you need to do is mix 2 cups of granulated white sugar with ¼ cup of molasses. Stir. Then! If you want to make dark brown sugar instead, double the amount of molasses to ½ cup. See recipe card for printable instructions.
Tips for success
How easy was it? I'll leave you with these quick final tips:
- Use the right jaggery. You will find 3 types of molasses in the store, but only 2 types are suitable for baking: light or dark molasses. Make sure you don't use blackstrap molasses, which has a very bitter, unpleasant taste.
- Press out any clumps. If you notice the molasses forming in the sugar, break it up by pressing the back of a rubber spatula or spoon against the side of the bowl.
- Store airtight. I go into more detail about this below, but be sure to store this sugar airtight immediately. Air hardens sugar, so the sooner you store it, the better.

If you're in a hurry, place the hardened sugar in a microwave-safe bowl covered with a damp paper towel for 20 seconds. It helps to soften quickly.
How to save
The best way to store brown sugar is in an airtight container or ziplock bag. I like the ziplock method because it's easier to press out excess air.
If you are using Tupperware or a similar container, I recommend pressing a piece of plastic wrap against the surface of the sugar before closing the lid. Stored properly, sugar can last up to 6 months (or longer).
