Choosing a good zucchini
You're looking for three things: size, color, and stem. Smaller zucchinis are better, as larger ones tend to be waterier. When it comes to color, look for vibrant colors whether you're picking a green zucchini or yellow squash. And lastly, look for the stem. Having a good amount of stem in your zucchini will help it last longer.
Grilling Tips
- Zucchini should be cooked on the grill over medium heat (about 350 degrees) for about 10 minutes, no matter how you cut the zucchini. It takes about 10 to 15 minutes to get the zucchini tender.
- Zucchini can be cooked on skewers by itself or with other vegetables. If you use other vegetables on your skewers or meats, look for vegetables with longer cooking times, such as tomatoes, mushrooms, bell peppers, chicken and beef steaks.
- To get the cross-hatch marks on the zucchini, you can transfer them slightly by grilling.
