This easy sesame sourdough bread recipe creates a perfectly golden loaf, topped with black and white sesame seeds, followed by a drizzle of sweet honey.

For the beginning
(This would make about 125g starter. You will need 80g for this recipe)
- 25 g the beginning of sourdough
- 50 gr flour
- 50 gr water
For the bread
- 280 g warm water
- 1 tablespoon honey
- 400 gr bread flour or all-purpose flour

- 80 g starter
- 1.5 spoons salt
Mix the ingredients
- Combine the initial ingredients and place in a clean jar. Leave in a warm place for 6 hours or until doubled in size.
- After 6 hours, combine water and honey in a large bowl; mix well. Add the flour and sesame seeds and mix until a rough dough remains. Cover the dough with a damp towel and let it rest. Add 80 g starter to the dough and then salt. Wet your hands and mix these ingredients together.
- During the next 3 hours, stretch and fold your dough a total of 6 times, after every half hour.
Ferment in bulk
- After the stretching and folding is complete, let the dough rest in a warm place until it looks much puffier than it started.
Shape the dough
- Transfer the dough to a lightly floured surface and gently shape into a rectangle. Refrain from pressing the dough, as you risk losing its gases.
- Grab the bottom third of the dough and fold it to meet the middle. We take the right side of the dough and fold it so that it stays in the middle. Repeat this for the left side of the dough.
- Form the dough into a ball and roll it towards you to create surface tension. Place the dough ball in a floured bowl or basket. Cover the dough with a tea towel and refrigerate for 20 hours.
Bake
- Preheat the oven to 480 degrees Fahrenheit and place a Dutch oven or cast iron skillet in the oven. Let this warm for at least 30 minutes, then remove the dutch oven and place your sesame batter in the dutch oven. If you don't have a dutch oven, then place your formed dough on a baking sheet lined with parchment paper and place a glass of water in the oven. This will help generate enough steam for a perfect crust.
- Use a razor blade or sharp knife to score the bread. Place the lid on the Dutch oven and bake covered for 20 minutes.
- Remove the lid and bake uncovered for another 20 minutes. Allow the golden brown sesame bread to cool for 2 hours before slicing.
