Why our recipe?
- A Chef Cayt family favorite that can be easily scaled to feed many people!
- Everyone loves a hearty breakfast full of crispy hash browns, seasoned sausage, ham and vegetables.
- Easy, one-skillet recipe that's perfect for breakfast, brunch or even dinner.
Whenever Chef Cayt's family goes camping, this recipe is their go-to breakfast. It's so easy to make large batches of it and we love making it on the camp chef stove and griddle. This is a perfectly delicious breakfast that everyone will love to start their day with! You can leave out ingredients that your family doesn't like, but you can easily add in other vegetables or breakfast meats that they like so that it suits your taste.
Material notes
- Frozen Shredded Hash Browns: Using frozen hash browns makes this recipe come together so quickly, but you can also use homemade hash browns if you prefer. Cubed or diced hash browns work just as well and provide a slightly different texture.
- Ground Pork Sausage: There are many variations of sausage that you can use, so go for what you like. Spicy sausage would be a great alternative, but the original would also be very tasty.
- Diced Ham: We like to get double the protein in this recipe, but feel free to use any breakfast meat you like in this recipe. If you're not big on ham, bacon works great too.
- White Onion: You dice it and fry it and it adds great flavor to the hash.
- Red Chilli: We like to use a red bell pepper on this one, but any color bell pepper will work great.
- Cheddar Cheese: We love the sharp, classic taste of a cheddar cheese, but feel free to switch it up and use your favorite cheese here.
Hashbrowns thawing
Refrigerator method It is the best option for even thawing and reducing excess moisture. Simply store frozen hash browns in their original packaging or in a sealed container in the refrigerator. Let them thaw overnight or at least 6-8 hours and they will be ready to cook without any extra preparation.
Microwave method The fastest way to thaw hash browns. Spread them in a single layer on a microwave-safe plate and, using the defrost setting, reheat in 30-second intervals. Turn them occasionally to ensure even thawing and pat dry with a paper towel to remove excess moisture before cooking.
If you are pressed for time And to skip the thawing process entirely, you can cook hash browns straight from frozen. Add a little extra butter or oil to a pan and cook on medium heat so that they cook evenly and don't stick. Just keep in mind that cooking them straight from frozen may take a little longer than thawing them.
Serving advice
This is a great recipe for you and your family to experiment with and make your own. We like to eat it with salsa or hot sauce, and sour cream provides a bit of creaminess to add an extra kick. We sometimes serve this dish with muffins on the side. Try it as a filling for breakfast burritos, or serve with pico de gallo.
Making progress
This is a great recipe to make ahead of time! You just need to make the hash and then store it in the fridge. When you're ready to eat it, you reheat it in an oven-safe dish covered tightly with aluminum foil for 20-25 minutes at 350 degrees.
