Fresh Mango Salsa Ingredients:

- ripe mango. Mangoes are ripe in New Jersey during the summer months, so that's usually when I make this salsa, but you can buy frozen mangoes year-round and thaw them for this recipe as well.
- Red pepper bells. You can also use green, orange or yellow bell peppers!
- garlic. I always add a little minced garlic to all my salsa recipes and this is no exception.
- cucumber. Light, crunchy cucumbers are perfect in this recipe.
- jalapeño. You can use as little or as much jalapeno as you like. I usually use about 1/2 jalapeno, but it depends on the size and how much heat you like!
- Red onions or shallots. I like to use red onions or shallots because they have a mild onion flavor. You can certainly use yellow, Spanish, white or even Vidalia onions.
- kosher salt. Salt just enhances all the flavors or salsa.
- Fresh lime juice. Lemon juice goes perfectly with mango, but you can also use lemon juice. Make sure to use fresh rather than bottled. It's just better!
- Chopped coriander leaves. I love cilantro, but I know it's one of those ingredients that people like or they really don't. So if you are not a fan of cilantro, you can add some fresh chopped flat leaf parsley in its place or of course omit it altogether.
- sugar. This is completely optional based on how sweet you like your salsa or how sweet your mango is. You can add just a tablespoon to enhance the flavor or leave it out, completely up to you!
How to cut a mango:
I have 3 strategies that I like:
- First: Slice along the hole. The pit is a flat disc in the center of the mango. With each half you can score the meat in a cross pattern. Use a spoon to remove the mango from the skin.

Can you add sugar?
Here's the deal, mangoes are definitely sweet, and while you don't need to add sugar here, a little sugar can add a depth of sweetness that really brings out the mango flavor, especially if they're not super ripe.
Easy ways to customize:
You can really make this mango salsa your own. Here are some ideas on how to get creative:
- Add the avocado! Avocados would be amazing in this recipe! I just dice one and add it to the rest of the ingredients. This salsa also makes a great topper in a bowl of guacamole!
- Increase the seasoning. You can definitely add more jalapeño to this recipe if you like it spicy! Even a few dashes of cayenne or jalapeño powder works great!
- Use other types of fruit. Peach or pineapple would be a great substitute for mango in this recipe.
- Add some tomatoes! If you prefer a more traditional style salsa, go ahead and add plenty of diced tomatoes!
- If you prefer a less “chunky” salsa You can add all the ingredients to a food processor or blender and pulse lightly a few times!

- 3 Medium mango, sliced
- 1 cup Cut red bell pepper
- 1 Clove garlic, minced
- 1/2 cup sliced cucumber
- 1/2 jalapeno, diced
- 1/3 cup Chop red onion
- 1/2 tsp kosher salt
- 2 tbsp Fresh lime juice
- 3/4 cup Chopped coriander leaves
- Optional – 1 tablespoon granulated sugar, or more to taste
- Combine mango, red bell pepper, garlic, cucumber, jalapeño, onion, sugar, salt, lime juice, and cilantro in a medium bowl. Stir to combine and add more sugar if desired.
