In this recipe, the crunch of croutons brings some texture to roasted red peppers, black olives, and feta. It is finished with a burst of lemon juice to bring out a bright taste. Give your zucchini a twist!
Material notes
- Zucchini: Look for medium-sized zucchini that is firm to the touch and free of soft spots. This will hold up well as boats for filling.
- Roasted Red Bell Peppers: You can find them in a jar, usually near the pickle or spice section of the grocery store. Or use a fresh bell pepper for a little extra crunch.
- Garlic Croutons: If you don't have garlic croutons, any flavored croutons or even homemade ones will work.
- Black olives: Canned black olives are quick and easy, but you can use Kalamata olives for a stronger, brighter flavor. Just cut them.
- Feta Cheese: If you need an alternative, try goat cheese for a similar texture and flavor.
