Material notes
- ham: Use a bone-in shank, butt or whole ham for best results.
- Stone Ground Mustard: Some grocery stores carry this particular mustard near the deli section.
- Brown Sugar: Light brown sugar works best.
- Pineapple Slices: You can use fresh pineapple chunks but for convenience, use canned pineapple chunks and pineapple juice.
Ham substitute
Not all hams are created equal, especially for this recipe. You want to opt for butt or chilled portions, bone-in and unsliced. Be aware that this recipe will not work with a spiral-cut ham! Cut varieties will not cut nicely. If you use a shank, be sure to trim off any tough skin. We used the boneless variety when in a crunch, and it worked! You should keep in mind that larger pieces of meat will take longer to cook.
Additional flavor options
While we think you'll enjoy this pulled ham recipe just as it is, you can add additional flavors to the dish to suit your taste. Chili flakes, orange zest, maple syrup, and green chiles are all great options.
Make sure you stay away from anything salty while adding more flavor. The ham is already a piece of meat, so you don't want to add more salt to the mix. Over salted meat is one thing you want to avoid!
cooking options
You can cook this delicious pulled ham in a variety of ways, including baking it in the oven or using your slow cooker. Use a meat thermometer to determine internal temperature. It should read between 200-205 degrees Fahrenheit. You'll also be able to tell it's ready when your shredded ham is, well, shredded!
Stove: Cover the pan tightly with aluminum foil and place in a 250 degree F oven for 5-7 hours, depending on the size of ham you choose.
Slow Cooker: Cook on high for 4-6 hours or on low for 6-8 hours. Check to make sure your ham stays moist throughout the cooking process.
Smokers: If you're interested in using a smoker to cook your dishes, our dear friend Susie at Hay Grill Hay has you covered. Smoked version Chef Cayt's Pulled Ham!
