It's the classic taste of caprese in the form of juicy chicken breast surrounded by tomatoes and chicken topped with melted mozzarella. Tomatoes burst when roasted with chicken for a sheet pan dinner that looks like something you'd order at a restaurant. Serve it alongside a simple salad for a lighter option, or over pasta or even plain steamed rice.

Material notes
- Chicken: Thin chicken breasts work best for this recipe, as they cook quickly and evenly. If your chicken breasts are thick, slice them in half horizontally or pound them to even thickness.
- Olive Oil: Use good quality extra virgin olive oil for best flavor.
- Salt and Pepper: Adjust to taste, but be sure to season generously for best results.
- Garlic Powder: Fresh garlic adds a subtle garlic flavor without the hassle of chopping. If you prefer fresh, use 2-3 cloves minced, but watch out as they can burn easily.
- Cherry Tomatoes: Vine cherry tomatoes are the prettiest, but you can just use loose tomatoes as they are much easier to find. Grape tomatoes can also be used. You can even use a mixture of yellow and red tomatoes.
- Fresh Mozzarella: Use fresh mozzarella for the best melt and flavor. If you can't find fresh mozzarella, thick slices of regular mozzarella will work too.
- Balsamic Glaze: You can find it in the vinegar aisle of most grocery stores or make your own Reduce balsamic vinegar until thickened.
- Fresh basil: It's the classic garnish for caprese and is more than just pretty, it also adds flavor. You can also use 1 teaspoon of dried basil if it is more convenient.
Tomato substitute
Cherry tomatoes on the vine: These are the showstoppers. They are perfect if you want to add a little extra flair to your dish and make it look as amazing as it tastes.
Loose cherry tomatoes: For a more convenient option, loose cherry tomatoes are just as delicious and much easier to find. They are nicely fried, getting all sweet and juicy, which is exactly what you want.
Grape tomatoes: They are a bit firmer, so won't burst as much in the oven. Grape tomatoes are a great choice if you like your tomatoes a little more intact.
mixed colors: Want to add some color to your dish? Go for a mix of yellow and red tomatoes. Not only are they beautiful to look at, but the slight difference in taste between the two adds a fun twist.
Roma or plum tomatoes: Not our favorite choice for roasting, but they still work. Cut them into quarters.
Serving advice
Listen, it's delicious, but it's not a complete meal with just chicken and tomatoes. So here are some nice simple options:
- Simple green salad: Keep it light with a mix of leafy greens with balsamic vinaigrette for that caprese flavor perfect wingman.
- Garlic bread: Feeling a little pampered? Heat up some garlic bread. It's basically a sponge for all that delicious tomato juice – you won't regret it.
- the pastA: Want to carb load? Serve the chicken over the pasta. Toss noodles with olive oil, garlic and Parmesan. It's like a chicken's best friend.
- steamed Rice: Sometimes, simple is best. Steamed rice is here to soak up all the delicious goodness from the chicken and balsamic glaze—no fuss, just flavor.
- Roasted Vegetables: Throw some extra vegetables on the sheet pan, like zucchini, bell peppers or asparagus. They'll roast alongside the chicken, adding some color to your plate and a healthy sidekick.
