What you will need

- Avocado oil- You can use vegetable, corn or canola oil for this.
- Romaine Lettuce – Iceberg lettuce is a great swap. Do not use French, Italian or Bib lettuce because their leaves are too soft.

- salt and pepper – I like kosher salt and freshly-cracked pepper.
How to Make Grilled Shrimp Caesar Salad

- Make the dressing. Set the grill to medium-high heat. Add all dressing ingredients to a food processor and blend until smooth and emulsified. Oil and vinegar should no longer be separated. Set it aside.
- Grill the lettuce. Toss lettuce with avocado oil. Grease the grill/grill with cooking spray. Add the lettuce and grill it for 2-3 minutes per side, or until slightly charred and wilted. Remove from heat and set aside.
- Cook the shrimp. Season the shrimp on all sides with salt and pepper. Place it on the grill, cook it for 2-3 minutes, or until slightly crispy and no longer translucent. Remove from heat. Set it aside.

Caesar Dressing:
- Heat the grill to medium-high heat, about 375 – 400°F.
- In a small food processor, add garlic cloves, stone ground mustard, Tabasco sauce, lemon juice, Parmesan cheese, white wine vinegar, olive oil, salt, and pepper. Blend until the garlic cloves are minced and the dressing is emulsified. (No more oil and vinegar separation) ** If the dressing is too tart for you, add a teaspoon of honey ** Set aside.
- Season shrimp with salt and pepper.
