This recipe uses fresh ingredients that are all sliced, making preparation and cleanup easy. The convenience doesn't stop there, though – this all cooks in one skillet and takes about 30 minutes to cook. Say hello to your new favorite weeknight meal!
Material notes
- Boneless skinless chicken breasts: We recommend using chicken breast for this recipe. Thighs can also work, but you'll need to cook them longer. Whichever cut you use, make sure you use skinless chicken.
- Pepper: Any color of bell pepper will work for this recipe! Feel free to use one color or multiple colors depending on what your family likes or what's on sale. Cut them into thin strips that will be easy to eat.
- Red Onion: Halve your onion and then cut into thin slices. Red onion works best for flavor and color, but you can also use white or yellow.
- Lemon juice: Fresh limes are best, and you'll need about two for this recipe. Bottled lime juice will also work.
- Flour Tortillas: Go ahead and use your family's favorite flour tortillas, but we recommend reheating them in advance.
- Toppings: We like to put a dollop of sour cream on top, and even squeeze some extra lime wedges on top for a little extra zesty kick!
Spice mix
While you can often find pre-made fajita seasoning mixes at the grocery store, we recommend making your own! Each brand of fajita spice mix differs in its proportions and quality of spices, so using our spice mix ensures a quality taste. It only takes a few extra minutes and really enhances the flavor of your fajitas.
Red Chilli Flakes: Another advantage of making your own spice mix is that you can control the spice level—if your family is not spice tolerant, you can reduce the amount of red pepper flakes you add. Or, if you're really looking for some heat, feel free to add more!
How to Warm Tortillas
The general preference is used Fajita TortillasWhich are 6-inch flour tortillas, because they're the perfect size to hold all those delicious fillings. They are usually warmed up for serving.
To heat the tortillas on the stovetop: Heat a dry skillet over medium-high heat and sear each tortilla until soft and lightly charred, about 30 seconds per side.
To heat the tortillas in the microwave: Stack tortillas on damp paper towels and microwave in 20-second increments until warm.
To heat the tortillas in the oven: Wrap a stack of tortillas in aluminum foil and heat in a 350°F oven for 10-15 minutes.
Storage and reheating instructions
Keep in fridge Leftovers in an airtight container for up to five days.
to freeze Store leftovers in an airtight container or resealable plastic freezer bag. Thaw overnight in the fridge.
Reheat in a skillet On the stove over medium-low heat, stirring occasionally, until heated through.
Reheat in the microwave Place leftovers in a microwave-safe dish, cover, and heat in 30-second increments, stirring, until heated through.
