Marry Me Chicken is quite a statement for a recipe, but you'll understand why once you make it! This version changes the ingredients from the popular recipe so it is a little less heavy and higher in protein. With juicy chicken in a rich, creamy sauce, it's the perfect easy weeknight dinner.
Marry Me Chicken Recipe
This recipe was originally developed in 2016 by a popular food magazine before it went viral on TikTok. The idea is that it's so good you can expect a marriage proposal if you serve it to your significant other! Since then, several different versions have come out with the same flavors.
The original called for dredge chicken breasts in all-purpose flour and then sear them in a large skillet until golden brown and slightly crispy. Then he added heavy cream, parmesan cheese, red pepper flakes and other spices.
My version skips the cooking and uses a slow cooker (or Instant Pot) for an even easier chicken dish. It's basically a chicken dinner recipe that still has all the flavor. I use chicken breasts, but you can also use skinless chicken thighs or drumsticks.
And instead of heavy cream, I use Greek yogurt. It adds the creamy flavor, but it's a little cleaner and has more protein. I also skip the parmesan cheese, but you can always add some at the end if you like. The chicken is combined with sundried tomatoes, garlic and Italian herbs for amazing flavor!
What to serve Marry Me Chicken with
My kids loved this with egg noodles, but there are so many options. For a low-carb version, try veggie noodles (like zucchini or butternut squash). It's also good over rice, pasta, or even potatoes. Either baked potatoes or mashed potatoes would be good.

Slow Cooker Marry Me Chicken
Minced chicken cooked in a thick creamy sauce that is full of Tuscan flavor! Clean and high in protein.

Place the chicken in the bottom of a slow cooker. Add the onion, garlic, sundried tomatoes, and 1 cup chicken stock. Add the Greek yogurt and seasonings (except the parsley) and stir to combine.

Cover the slow cooker and cook on low for 4-6 hours or until the chicken is tender and cooked through.

Shred the chicken in the slow cooker and stir into the cream sauce.

Serve the shredded chicken over pasta, rice, vegetables or mashed potatoes.

Sprinkle with chopped fresh parsley or basil before serving.

Pot Instant Marry Me Chicken
An even faster version for days you don't want to get the slow cooker out. The chicken is cooked in a rich, creamy sauce flavored with tomatoes and spices.

Set the Instant Pot to Sauté mode. Add olive oil, minced onion and minced garlic. Fry for 2-3 minutes or until the onion becomes translucent. Then, add the sun-dried tomatoes and cook for another minute.

Place the chicken breasts on top of the sautéed mixture. Pour the chicken stock over the chicken, making sure it is at least partially covered.

Secure the lid of the Instant Pot and set the valve to close. Cook on high pressure for 10 minutes. It will take a few minutes for the pressure cooker to come down to pressure before the cooking time begins.

Once done, let the pressure release naturally for 10 minutes, then carefully vent

Remove the chicken from the Instant Pot and set aside. Turn Instant Pot to Sauté mode. Stir in the Greek yogurt and seasonings (except the parsley). Let the sauce simmer for a few minutes to thicken slightly, stirring occasionally.

Shred the chicken using two forks, then return to the pot and mix with the sauce. Adjust the seasoning if necessary.

Serve the creamy chicken over pasta, rice, vegetables or mashed potatoes. Garnish with fresh basil or parsley before serving.
