My relationship with eggs has always been a strange one. Sometimes I wouldn't have eaten eggs for months and then I'd eat them for 14 days straight. Well, I guess weird just meant listening and adapting to my body's protein needs.
But one thing I know for sure. Eggs are one of my favorite fall and winter breakfasts. The bright and vibrant yellow color of the egg yolk brings out all the energy of the Sun that is often hidden in the morning fog and rain.
Hard-boiled eggs on a slice of bread with soft butter and a pinch of salt, that's how I've eaten my egg all my life.
