The sponge

- Add the all purpose flour, bread flour, egg, salt and sugar to a bowl and mix well. Once your mixture has formed a nice dough, stir the vegetable oil into the dough, dropping one tablespoon of oil at a time. Your dough will gradually become softer as you continue to cook. Cover the bowl with plastic wrap and let it rest for an hour.
- Spray the work surface with a little oil and knead the dough on it for 10 minutes. Round the dough into a tight ball and place it in a clean, lightly greased bowl. Cover the container with plastic wrap and place in a warm place to rest.
- Allow the dough to rise until doubled in size.
- Place the breadcrumbs on a plate. Flatten the dough into a large rectangle and shape it into a stick.
- Cut the dough into 12 pieces using a pastry cutter. Roll each piece of dough in the breadcrumbs. We put the dough in a small pan and cut the sides up.
- Cover the baking sheet with plastic wrap and let rise for an hour.
- Meanwhile, preheat the oven to 350F while the dough proofs for 30 minutes to 1 hour. Remove the wrap and bake for 30 minutes.
