This dish is versatile depending on what cut of steak you prefer, if you add extra veggies, or have a garden full of fresh herbs to throw in. Make it your own and completely change it every time. Different foil packet dinners every time!
Material notes
- Slices of Meat: You can really use any kind of steak that you like or that is on sale. Some of our favorites are sirloin, ribeye, tenderloin, and tri-tip.
- Potatoes: We use red because no peeling is required. Be sure to cut your potatoes small enough before adding them to your packet so that both the beef and potatoes finish cooking at the same time.
- Jalapenos: Jalapenos add a delightful heat to this dinner, but you can always remove the ribs and seeds from your jalapenos to reduce the heat.
- Butter sauce: These ingredients are the perfect combination to complement and enhance the beef and potatoes. Feel free to use fresh garlic if you like.
- Rosemary: Beef, potatoes and rosemary are a happy trio.
Mash your potatoes
Nothing but cheesy potatoes. Use shredded cheese of your choice and add to your packet as soon as cooking is complete. The packets will be steamy and hot, so be careful when adding your cheese.
Add more vegetables
Some of our favorite veggie additions are chopped mushrooms, bell pepper strips, and onion rings. You can really add any of your favorite vegetables to your foil packet dinner. If you're adding other root vegetables like potatoes – such as carrots, parsnips or turnips – be sure to boil them first before adding them to the packet.

There are different types of doneness depending on how you like your meat cooked. Cooking starts at 125 degrees F for rare, up to 160 degrees for best doneness. Most of us like our meat somewhere between these two extremes. If you want your beef well done, cook an additional 5-7 minutes.
Campfire Instructions
If you plan to cook your packet over a campfire, cut your potatoes into small pieces. The ideal time to cook your packets is over burning coals for a higher temperature. If you put it directly on the coals, add an extra layer of foil. Check your packet after 15 minutes. Continue cooking until the potatoes are tender and the beef reaches your desired doneness.
Please direct forward
You can cube the steak, prepare the butter sauce, and boil the potatoes 24 hours in advance. Just make sure the potatoes are cool before assembling the foil packets. Store in the refrigerator until ready to cook. If you plan to camp and cook over a fire, prepare your packs before you go and transport them in a cooler with ice.
Storage and reheating
Keep in fridge Remove leftovers from foil packet and store in an airtight container for up to 5-6 days.
Reheat Heat a little butter or olive oil in a skillet over medium-low heat. Use about 1 tablespoon of butter or olive oil per packet.
This dish is not ideal for freezing, as the texture of the potatoes may change.
