Choosing your peppers
Important Note: Like any hot sauce, this sriracha recipe is spicy! Use small quantities in recipes or as a air conditioner at first until you know how spicy it is. Also, I would recommend using gloves when you do this (or any) hot sauce.
While Sriraca is of course very spicy, you can really use whatever peppers you want. Choose other hot chili peppers for a slightly different aroma such as Habanero or Serrano peppers. Tone down spice with some green jalapenos, red jalapeno peppers, or even bell pepper. The nice thing is that you can control the heat level!
Try sweet red peppers (release the sweetener) for a non -spicy version of great spicy. You can use this as a submerged sauce, add it to recipes or do it SRiRACHA Mayo.
