About Zucchini
How many zucchini do you actually need for this recipe? This is hard to answer because all zucchini are different sizes, but 1 medium sized zucchini should yield about 1 cup of grated zucchini.
Zucchini is high in water content, but don't worry. This recipe accounts for the extra liquid that the zucchini provides. Please do not squeeze your grated zucchini or try to squeeze the water out of it.
It really is as simple as grating the zucchini and adding it to the mixing bowl. So!
Peel or don't peel
No, you don't need to peel the zucchini. Yes, you could if you really wanted to or if you had someone in your house who would be freaked out by the little green bits of bread, but really, it just added time and effort. Grated zucchini softens when baked, so there's no bite to the skin when done in the oven.
Storage and reheating instructions
