- In the bowl of a stand mixer, combine the sourdough starter, water, oil, salt, baking powder and 4 cups of flour. Use the dough hook to cook for 4-6 minutes, until the dough forms a smooth ball. If the dough is sticky, add a little more flour, until you reach the right consistency.
- Place the dough in a lightly oiled bowl, cover it with a kitchen towel or wrap and let the dough rest at room temperature for half an hour.
- After 30 minutes, remove the dough and divide it into 32 equal parts (30 grams each).
- Use the palms of your hands to roll each piece of dough into a ball, pressing down slightly. Use a little flour so that the dough does not stick to the surface.
- Cover the pieces of dough with a towel and let them rest for 5 minutes.
- Grab a rolling pin and start rolling each tortilla dough into a thin circle. Next, heat a cast iron skillet over medium-high heat.
- Once the pan is hot, add the tortilla and cook on each side for 30 seconds to a minute.
- Place your cooked tortillas on a baking sheet and let them cool before placing them in an airtight container.

If you are sensitive to gluten, then sourdough starter might be the best option for you to use in this recipe. The 24 hour fermentation period will allow the bacteria in the sourdough starter to pre-digest the grains, making them easier for your body to process.
Additionally, you can use a gluten-free sourdough starter, but this may take longer than you'd hope, meaning you'll have to create a starter from scratch, and food that gluten-free flour, before continuing to bake a gluten free sourdough bread or tortillas. For this sourdough tortilla recipe, I chose to use my sourdough jar for that subtle tangy flavor.

You can certainly make these sourdough tortillas with wheat flour.
Although I have never attempted to make this recipe using only whole wheat, you could instead include ¾ cup all-purpose flour along with ¼ cup whole wheat flour, adding more flour as needed and when necessary.
