Our delicious recipe is a spin on the classic banoffee pie, which traditionally combines banana and dulce de leche in a crispy biscuit (or graham cracker) crust. Our version replaces the traditional crust with our honey shortbread crust. It tastes like a graham cracker with the texture of a more traditional pastry pie crust. As if that wasn't delicious enough, we added toffee to bring another layer of deliciousness.
Material notes
- Banana: Make sure your bananas are ripe but firm. We are looking for firm yellow bananas that have not started to develop spots. Overripe bananas can be too mushy in pies.
- Caramel Sauce: Can be found at your local grocery store, often under the international food aisle near the Latin American section.
- Toffee Bits: Find them at the bottom of the baking aisle near the chocolate chips.
- Heavy Cream: It can also be labeled as heavy cream or heavy whipping cream – either works well.
Crust option
This recipe features our Homemade Shortbread Pie Crust. However, you always have other options. You can go traditional with a homemade graham cracker crust or buy a pre-made one. You can choose a classic pastry crust or store-bought options such as roll-out pie crust or frozen pie shells. This recipe is designed for a standard 9-inch pie crust, so be sure to bake the crust ahead of time according to the package instructions, as the filling doesn't need to be baked.
The finishing touch
For a gorgeous finish, spread the whipped cream evenly over the pie using a spatula or the back of a spoon. You can create smooth, elegant swirls or rustic peaks for a homemade look. Garnish with extra toffee bits or freshly grated chocolate shavings for an elegant look and added flavor.
Storage instructions
Keep in fridge Cover leftovers with aluminum foil or plastic wrap. It will stay fresh for 3-4 days in the fridge. Usually when you see bananas turning brown, the pie is no longer fresh.
