David: Where can I start? I have so many thoughts on that. I think we can first check the easy answers. So, first of all, the chocolate shape you use matters. If you are using chocolate chipsThey are specifically created to not melt. And this has an impact on the final structure of your cookie.
A chocolate cookie that uses chocolate chips will not spread so much, which is neither good nor bad: it is a stylistic thing, but it is absolutely important. If you are by chopping your chocolateYou will get chocolate pools throughout your cookie. Your cookie will put a little better; You will also have some bites that are full of chocolate and then pieces of cookies that are not. Personally, this is my preference.
Now, for what KIND of chocolate to use, I mean
Jessica: I mean, find your happiness, right? I think there are many brands with good quality of chocolate chips there. Half chocolate will be sweeter than bitter chocolate. The specific percentage of cocoa in Bittersweet versus semisweet chocolate differs from brand to brand, but you can assume that semisweet chocolate will always be a little sweeter than bittersweet. It really comes down to personal preference.
David: And yours is it?
Jessica: Well, this is a good question. I like bitter chocolate in my biscuits. But my children like semisweet chocolate. Honestly, often what I'm doing is digging whatever chocolates and bobs I have in my pantry. So it will be like some chocolate chips, some chopped chocolate, you know, everyone in the pool. And you know what? It always turns out quite well.
David: I, like you, prefer a bitter chocolate in my cookie. For me, the chocolate is there to offset the sweetness of cookie.
